The ounce on a food label is the avoirdupois ounce, about 28.3495 grams. Precious metals kept the older troy system, where an ounce is 31.1034768 grams exactly, about 9.7% heavier. Every serious gold quote, vault statement and token contract uses troy; every confused forum post about “my gold weighs less than I bought” uses kitchen ounces. The conversion constant here is a definition, not an estimate, so the math on this page does not age.
The PAXG column exists because one PAXG token represents one fine troy ounce of a London Good Delivery bar. Token amounts are therefore just troy ounces wearing a different name, and fractions carry through: 0.05 PAXG is 1.5552 grams of vaulted gold.
